It is important that the milk is not warmer than 30 degrees, otherwise the milk will coagulate and curdle. <\/p>\n<p>Optimal pH value is between 5.5 and 5.8<\/p>\n<p>When using milk powder, first prepare it in a smaller quantity\u2014with the correct proportion of milk powder\u2014at the right temperature (45 degrees mixing temperature), then cool it with cold water (to 30 degrees or slightly
