Citric acid
Natural citric acid without additional ingredients, offering an excellent alternative for functional, simple, and safe acidification of whole milk.
Citric acid is used for ad libitum feeding or to improve the processing of whole milk.
The standard dosage is 1 g of citric acid per 1 liter of (whole) milk. It is important that the milk is not warmer than 30 degrees, otherwise the milk will coagulate and curdle.
Optimal pH value is between 5.5 and 5.8
When using milk powder, first prepare it in a smaller quantity—with the correct proportion of milk powder—at the right temperature (45 degrees mixing temperature), then cool it with cold water (to 30 degrees or slightly lower) to the required volume.
